Nicola's Cake

Just logging in for a status update. It's been a while since I made this cake for my family, but I enjoyed making it immensely and hope to get back to baking when I have some time. This cake was a delicious chocolate cake, with a heart on top made from grated chocolate. It's bordered with silver cachous, and topped with candles for a special touch.

Cupcake Time!

This weekend, my cousins are coming over for morning tea. I'm going to make cupcakes! Since my cousins are boys, I'll ice them with blue icing (hopefully the glitter one I am hoping to buy).

I'll probably use this recipe from http://www.cupcake-creations.com/cup-cake-recipe.html

Ingredients
5 oz (150g)Butter - softened
5 oz (150g)superfine (castor) sugar
6 oz (175g)self-raising flour
3eggs
1 tspvanilla extract
Method
1.Pre-heat the oven to 350oF (180oC).
2.Line a 12 cup cake pan, with cup cake papers.
3.Crack the eggs into a cup and beat lightly with a fork.
4.Place all the ingredients in a large bowl.
5.Beat with an electric mixer for 2 minutes, until light and creamy.
6.Divide the mixture evenly between the cake cases.
7.Bake for 18-20 minutes until risen and firm to touch.
8.Allow to cool for a few minutes and then transfer to a wire rack.
9.Allow to cool fully before icing.
Notes
    Makes 12 cakes.
Try this easy Chocolate Icing or if you prefer Vanilla Icing.

Shopping List!

Hello!

I received money for my birthday and was thinking I should buy some cake decorating things!

So here are my plans:

A sparkly decorator icing in Blue!

And some really cute sprinkles: in versatile shapes that will work for everything (stars, polka dots, animals etc!)

My Very First Cake

This one was a bit of a cheat actually! I got a sponge cake from the supermarket. I made icing and separated it into two bowls. I coloured one blue, and the other purple. Iced the middle of the two cakes, sandwiched them together, and  iced my patterns.

Icing:

Icing Sugar
Boiling Water

Easiest icing ever invented. Pour out a bit of icing sugar to start. Add about 2/3 drops(!) of boiling water and mix in. It should create a smooth consistency icing. If not, never fear, add more icing sugar or water and stir. Add more sugar/water to achieve the desired amount of icing.

Variations:

Chocolate: Add a teaspoon (or slightly more depending on quantity of icing) and stir.
Coloured: Add a few drops of food colouring and stir.
Vanilla/Other Essence: Add a few drops of essence and stir.
